protein power bowl – taco bell inspired

I posted this little concoction in my Instagram stories last week, and BOY did you guys have a field day with it. [Cue all of the DMs!]
Since it became so popular, I decided to tweak the recipe a bit so everyone could give it a try. Here’s what I came up with…

Protein Power Bowl
Serves 8
-2 pounds of chicken (fully cooked with 1 packet of taco seasoning)
-8 oz container of guacamole (I used one from the Walmart deli. Yum!)
-1 bag of shredded lettuce
-1 can of black beans (refried or regular pinto beans work as well) 
-1 bag of shredded cheese
-8 oz of sour cream
-1/2 box of cooked rice (I used leftover jambalaya (minus the sausage) for this one. Makes it 1000x’s better!)

Mix 1/8 of all ingredients into a bowl per serving. Easiest lunch ever!
