In my defense, I’ve been dealing with non-stop morning sickness, which tends to suck the fun out of pretty much anything. Mostly cooking…and, well, eating.
Luckily, these peanut butter no-bakes are easy – throw the ingredients into a pot, stir, and chill.
Not gonna lie, sometimes I don’t even wait for these to harden. I’ll just grab a spoon and eat the batter straight from the pot. Ha!
Peanut Butter No-Bake Cookies
•1/4 cup of butter
•Pinch of salt
•2 tablespoons of unsweetened original almond milk
•2 tablespoons of water
•1/4 cup peanut flour (PB2 Powdered Peanut Butter is a good one)
•1 tablespoon vanilla protein powder (I used Pure Protein Vanilla Cream)
•2 tablespoons of Pyure (make sure it’s the kind without maltodextrin!)
•3/4 cup of uncooked oatmeal
1. Melt butter and add salt.
2. Add unsweetened almond milk, water, and peanut flour. Remove from heat.
3. Add protein powder, sweetener, stir well.
4. Slowly add oatmeal 1/4 cup at a time. Spoon onto a plate and refrigerate until solid.
If you’re impatient, just eat the batter as is. No one will judge. 😉
These are wonderful paired with a small glass of milk. The recipe makes about six decent-sized cookies, so you can double or triple it depending on how many hungry mouths you have to feed.
I didn’t run this one by a test group (my sibs), but Logan and I eat all of them in one sitting 99% of the time, just sayin’.
